ABOUT GLOBAL

    Yoshikin factory was established in 1954. The GLOBAL Classic Series was designed by Japanese industrial designer Komin Yamada in 1983 and the brand was launched internationally in 1985 in collaboration with Mino Tsuchida.

    Still crafted by hand in Yoshikin’s factory in Niigata, Japan, GLOBAL knives are manufactured to extremely high and exacting standards using a three-piece construction method beginning with highest quality Stainless Steel sheets. 


    GLOBAL knives have been hand crafted in Japan for over 30 years and are developed using the best raw materials available. Each knife is carefully quality controlled and weighted to ensure perfect balance in the hand.

    Compared to conventional European knives GLOBAL knives are made from a significantly harder alloy of steel and use a thinner blade. The steep 15° angle cutting edge of the blades produces a sharper knife that also holds its edge for longer and allows for more accurate work.

    Care:

    Looking after your GLOBAL knife is very important, as improper care can severely damage your knife. Stamped GLOBAL blades have edges that are razor sharp. To obtain such sharp edges, they are factory sharpened at an angle between 10 and 15 degrees. Sharpening at this angle results in a thinner edge, so some words of caution are necessary.

    
Cleaning:

    GLOBAL knives should be hand washed with warm soapy water. After washing, rinse off with warm water and dry thoroughly with a towel. GLOBAL knives should NOT be placed in the dishwasher since it can damage the sharp edges of the blade. In addition, exposure to extreme heat and powerful detergents found in dishwashers can be harmful to CROMOVA 18 high carbon stainless steel.

    
Storage:

    GLOBAL knives are very sharp and should be carefully stored to avoid accidents and kept out of the reach of small children. GLOBAL recommends the use of the knife blocks, magnetic wall racks, knife docks, or knife rolls/cases.

    
Sharpening:

    Whetstone sharpener:

    A traditional method of sharpening using a ceramic whetstone. Full instruction is available with your whetstone.

    Water Wheel Sharpener (or Ceramic Sharpening rod):

    We stock the GLOBAL Water Wheel Sharpener. These are hand held ceramic water sharpeners and no experience or skill is required to use them. By simply filling the reservoir with water and running your knife backwards and forwards a few times, the ceramic wheels ensure the blade is sharpened at the correct angle.

    If you prefer to use a sharpening rod, GLOBAL recommend only ceramic or diamond sharpening rod to be used. DON’T use traditional steels made from other materials as they are likely to damage your GLOBAL knives.
