The finely hand sharpened teeth provide a very fine textured grated product. It is really, really worthwhile buying a good quality oroshi garter of this type. The craft involved in getting the fine sharp teeth is essential for grating quality ingredients and for a quality outcome that does justice to perfectly fresh produce.
The oroshi grater makes the classic Japanese little juicy grated dob. Think the dob of grated ginger on top of fried tofu steak, for example. Or the grated daikon mound that sits atop tofu agedashi. A great way to get ginger juice and grating for marinades.
All three can be used for various tasks, including garlic, ginger, daikon, citrus rinds, wasabi, etc.
