An extremely handy tool for the Japanese kitchen.
Traditional miso strainer with wooden pestle.
Simpley place your desired amount of miso in the wire strainer and place this in your warm dashi stock on the stove. Use the wooden pestle to gently grind the miso to make it into the wet paste that then incorporates into the dashi broth and makes the miso soup. The semi coarse strainer allows all the flavourful miso to pass thorugh into the dashi whilst keeping out the larger bits of rice koji.
